1 tsp finely grated orange rind
1 tsp vanilla extract
1 1/2 cups self raising flour
1/4 cup castor sugar
375 ml buttermilk
1 egg lightly beaten
1 tbs melted margarine
1 cup blueberries



  1. Sift flour and sugar together in a bowl, add the rind.
  2. Mix buttermilk, vanilla extract, egg and melted margarine in a jug, add to the dry ingredients, mix well.
  3. Gently stir through the rind and blueberries.
  4. Preheat a non-stick frying pan, spray with cooking spray.
  5. Cook pancake one at a time
