This literally means fried rice. Most Asian countries have a variation of the theme, this one is the Indonesian style.
3 tablespoon canola oil
1 tablespoon Massel chicken style stock powder
6 cups of cold cooked rice (Jasmine preferably)
2 tablespoon kecap manis (Indonesian sweet soy sauce)
2 teaspoon Maggi seasoning (just use normal soy sauce if you prefer)
1/2 cup grated carrot
1/2 cup green peas
6 large red chilli, deseeded (if you can't handle the heat, replace with red capsicum)
2 cloves fresh garlic
salt and pepper to taste
- Beat eggs lightly with fork, season with salt and pepper. Heat a small quantity of oil in a fry pan, pour enough of egg mixture to make one pancake, turn, cook the other side. Remove from pan, repeat with remaining egg mixture. Roll up pancake, slice into thin strips, set aside.
- Grind the chillies (or capsicum) with onion and garlic into a paste, you can use a small food processor or mortar and pestle.
- Heat extra oil in pan, saute the onion mixture until fragrant, stir in rice. Add the rest of the ingredients and mix well.
